Welcome to the Laboratory of Environmental Microbiology
Our laboratory explores microbial genetic resources from natural and food environments to elucidate the functions of enzymes involved in fermentation, salt adaptation, and bioconversion. We aim to develop functional fermented foods, value-added materials, and sustainable bioprocesses through the application of microbial enzymes and fermentation technology.
Our research focuses on:
・Microbial ecology and enzymatic functions in traditional fermentation
・Engineering of salt- and desiccation-tolerant enzymes
・Enzymatic production of bioactive compounds for health-promoting foods
・Valorization of food by-products and biomass for circular bioeconomy
Over the past decade, our laboratory has conducted international collaborative
research with universities in Thailand, fostering academic exchange and
joint publications. We have also hosted international students from China,
Taiwan, Korea, and Thailand, who have successfully completed research in
our master’s and doctoral programs. We welcome collaborations and international
students interested in applied microbiology, enzyme engineering, and sustainable
food systems.
